Tapas w/ Tim

For Donderos’ prix-fixe tapas night on the first Thursday of June, we turn to Thailand, where Chef Tim Dondero has many family and work connections. He lived in Malaysia, just south of Thailand, for over seven years. He has spent considerable time in Thailand, and he and Christina were married in Bangkok, where she grew up.

Join us for an assortment of delightful small dishes from Thailand, and bring the wine of your choice. Tim will introduce and discuss the dishes as they are served.

The specialties this evening include:
• Larb Gai (spicy chopped chicken with toasted ground rice and lime juice), an appetizer from Northeast Thailand;
• Yam Neua (Thai beef salad with peanuts);
• Ajaad (sweet and sour cucumber salad/condiment), which comes from Southern Thailand and exhibits Malay influences;
• Nam Ya Pla Kanom Jeen (triple-fish “Nam Ya” curry served with rice noodle packages);
• Gai Yang (Thai barbecued chicken with tangy cucumber sauce), another Northeastern Thai treat.

The dishes will not be made as “hot” as some of them would be in Thailand. However, necessarily, to taste authentic several of them must have a little heat. Certain wines go well with such dishes, particularly whites that have both acidity and residual sweetness. Other wines clash with the components of chili peppers, specifically red wines with tannins. This is not a meal for Cabernet Sauvignon, Malbec, or Spanish red wines. Tim’s choices for this food include Albariño and Chenin Blanc.

Alternatively, for a great wine pairing at a modest price, see Dave Wells at the Healthy Gourmet (1087 Baxter St, telephone 706 353-3107). Dave and Tim frequently teach cooking and wine classes at the Healthy Gourmet, and Dave selects wines to go with Tim’s style of cooking.
