Shrimp Salad

Your air conditioning is pumping as hard as it can and your power meter is spinning too fast to see!  Give your kitchen, yourself, and the power company a break by just boiling one small pot for 5 minutes today and using your toaster for 2 minutes.   This shrimp salad is delicious!

Here's the recipe for two servings:

Shrimp Salad

Ingredients:

1 container organic romaine lettuce, torn into chunks

1 avocado, diced

1 medium size carrot, grated

1 celery stalk, diced

1 medium tomato, diced (optional)

1/2 pound (or more if you wish) medium shelled, raw shrimp

Green Goddess Dressing

Instructions:

Steam the shrimp until just lightly pink.  Chill in ice water.  Peel and add to salad ingredients tossed.  Drizzle with Green Goddess dressing.  Serve with buttered sourdough toast.

This is a light and healthy dinner, but still very satisfying.  Using sourdough and Smart Balance as your butter is also low on the glycemic index for those watching their blood sugar.

Tip: If you ask your grocer to steam the shrimp for you (usually free!) you will save even more on your power bill!
